Fennel Seed is a bulbous, flowering perennial that is believed to originate from the Mediterranean region and is now cultivated in India, the Middle East, Russia, and France. The seeds are pleasant and lend a warm, spicy-sweet aroma and flavor to foods and teas. Traditional uses of fennel have been for a variety of complaints, especially digestive discomforts such as a remedy for gas, acid stomach, and motion sickness. Fennel is a cooling spice, contributing mainly to the sweet taste with an undertone of the bitter taste. Its taste is reminiscent of licorice.
